Vegetable Gardening

I spent the weekend with my family in Idaho. Yesterday (pre-rain) we did some planting. It made me excited for fresh tomatoes and dinners straight from the garden. I realize that cultivating a vegetable garden requires a certain level of dedication, hard work, and knowledge to produce produce (ha)! With the cost of goods rapidly on the rise, it's a great time to turn your soil, make your rows, and plant the seeds that will certainly reap great culinary rewards!

So, for those of you interested, but not sure where to start OR for those of you who know where to start, but would like a little bit of gardening advice--I'd recommend clicking here for guidance.

Krazy Kake

Try this Krazy recipe with your kids. They'll love it!
2 tsp. baking soda

1 tsp. salt

2 cups sugar

3 cups flour

1/2 cup cocoa

2 tsp. vinegar

1 tsp. vanilla

3/4 cup oil

2 cups water

Preheat oven to 350. Mix DRY ingredients together in 8x8 baking pan. Smooth out the dry ingredients. Using a spoon or cup bottom make three large holes in dry mix. In 1 hole pour vanilla, next vinegar,then oil and last pour water over entire mix. Stir with a fork until thoroughly mixed. Bake at 350 for 35-40 mins. Cool and top with powdered sugar or frosting.

A Touch of Inspiration

Sometimes we just need a gentle reminder to be a little kinder to those around us--to love and be loved.

5K


If anyone is interested, there's a 5K at Thanksgiving Point this coming Saturday, May 17th. The race begins at 8am and takes you through the beautiful gardens. It's the Running with Angels annual benefit run. It's a great time--walk, run, or just enjoy the supportive and empowering spirit of the race. Come.

Cheesecake Mini Tarts with Berries

I LOVE the Kraft Foods website. It's full of quick, tasty, affordable, and realistic recipes & isn't that what we're all looking for--time-saving tips to give us more time to enjoy the ones we love? This recipe is one of my favorites!

Makes: 12 servings Total Time: 20 min
Ingredients:
  • 1 package butter cookie
  • 1 tub Philadelphia Ready-To-Eat Cheesecake Filling
  • 2 pints strawberries or any other berry
  • Confectioners' sugar (optional)
  • Chocolate (optional)
Preparation
Use a star tip and fill piping bag with cheesecake filling.

Pipe on to individual butter cookie and top with berries! Yes it's that easy!

Dust with confectioners' sugar if desired. You can also drizzle chocolate on top of the tarts for an added touch.

Notes
You can use any type of butter cookie. You can use a chocolate cookie or any flavor you would like.

I use the disposable piping bag for quick clean up.

Chocolate Indulgence



CHERRY CHOCOLATE CAKE
1 pkg. chocolate cake mix
3 eggs
1 can (21 oz.) Wilderness cherry fruit filling
Combine cake mix, eggs and cherry fruit filling. Mix well. Pour into greased and floured 9 x 13 inch pan. Bake at 350 degrees for 35 to 40 minutes, or until cake springs back when lightly touched.
