Canning Butter Correction
Margie Harward just let me know about the most recent information about canning butter. She said this:
I received a food safety bulletin from the extension service--Utah State University. It says that the method to can butter at home has not been developed and may potentially lead to botulism or other food borne illnesses if they are stored at room temperature. Information can be found on the website http://extension.usu.edu/utah. You can also consult the USU Food Safety Program website at: http://foodsafety,usu.edu.
They changed the method of canning tomatoes a few years ago also. I guess they are always finding new information about ways to keep us safe.
So I guess I'm in the market for a cow again :)
